Lemon curd muffins


For 12 Muffins


250 g spelt flour

50 g powdered dextrose

70 g corn sugar

½ tsp baking powder

½ TL salt

2 eggs

150 g yogurt

80 ml sunflower oil


Lemon Curd



  1.  Pre-heat the oven to 180 degrees
  2. Fill a muffin tray with paper cases
  3. Beat the eggs and oil together until creamy
  4. Add the corn sugar and the dextrose and beat further
  5. Mix in the yogurt
  6. Add the flour, baking powder and salt. Beat until everything is well mixed in
  7. Cover the base of a muffin case with the cake batter. Add a teaspoon of lemon curd and cover with cake batter
  8. Bake for approx. 15 minutes
  9. Remove from the oven and leave to cool…eat! 😊
