Chocolate Chip Cookies

 

For 12 Cookies:

 

  • 300 g spelt flour
  • 2 tsp baking powder
  • 50 g powdered dextrose
  • 100 g corn sugar
  • 150 g soft butter
  • 2 eggs
  • 100 g dark chocolate (low fructose)
  • drop of milk (approx. 1-2 tbsp)

 

  1. Pre-heat the oven to 180 degrees
  2. Mix the flour and baking powder in a bowl
  3. Add the sugar and dextrose, butter and eggs. Mix well
  4. Add a drop of milk if necessary. The mixture should be a smooth batter
  5. Roughly chop the chocolate and mix into the batter
  6. Line a baking tray and place small amounts of the mixture on the tray using a spoon.
  7. Leave a gap between the cookies, as they need room in the oven
  8. Place in the oven and bake for approx. 10 minutes
  9. Remove from the oven, leave to cool, enjoy :)

 If you use chocolate that isn´t low-fructose, use a dark chocolate with 80 % cocoa.

1 cookie contains approx. 0,65 g fructose/12,43 g glucose/no sorbitol
