Nut corners 2.0

 

Difficulty: Easy

 

Ingredients:

  • 325 g butter (lactosefree)
  • 325 g corn sugar
  • 30 g vanilla sugar
  • 2 eggs
  • 300 g spelt flour
  • 2 tsp baking powder
  • 200 g nuts of your choice
  • 200 g ground almonds
  • 4 tbsp low fructose fruit spread

 

 

Directions:

  1. Cream together 125 g butter, 125 g corn sugar and the vanilla sugar in a bowl
  2. Add the eggs and mix well
  3. Mix the flour with the baking powder and add to the mixture a spoonful at a time
  4. Mix to a dough and make a ball
  5. Cover in clingfilm and put in the fridge for approx. 30 minutes
  6. Chop the nuts of your choice
  7. Melt the rest of the butter in a pan with 5 tbsp of water and the rest of the sugar
  8.  Add the chopped nuts and the ground almonds. Stir well and remove from heat
  9. Pre-heat the oven to 180 degrees
  10. Roll out the dough and place on a lined baking tray
  11. Spread the fruit spread evenly over the dough
  12. Divide the nut mixture over the dough and press down firmly
  13. Bake in the oven for approx. 30 minutes
  14. Remove from the oven and leave to cool before cutting in to corners
