Jammy Biscuits 

Preparation time: 25 minutes

Difficulty: easy

Yield: approx. 20 biscuits

 

Ingredients:

  • 225 g soft butter (lactosefree)
  • 140 g corn sugar
  • 350 g spelt flour
  • 7 g baking powder
  • pinch of salt
  • low fructose fruit spread of your choice

 

 

Directions:

  1. Pre-heat the oven to 180 degrees
  2. Cream the butter and sugar together
  3. Add the flour, baking powder and salt. Mix to a smooth dough
  4. Roll out the dough on a floured surface
  5. With a biscuit cutter of your choice, cut out 40 biscuits
  6. In 20 of them, make a small hole in the middle
  7. Combine the rest of the dough pieces and roll out to make some more biscuits.
  8. Remember, half of the biscuits have to have a hole in them
  9. Place the biscuits on tray with greaseproof paper and bake for approx. 10 minutes until golden brown
  10. Remove the biscuits from the oven and leave to cool down
  11. Spread the fruit spread on the whole biscuits and place the biscuit with a hole on top
  12. Enjoy!!
