Rum truffles

 

For approx 20, you need:

 

  • 140 g low fructose cake (for example, my red wine-chocolate cake)
  • 3 tbsp rum
  • 1 tsp rum extract
  • 100 g dark chocolate (low fructose)
  • 1 tbsp cocoa powder
  • 1 tbsp powdered dextrose
  •  approx. 30 g grated dark chocolate (fructosearm)

 

  1. Make the cake in to crumbs and put in a bowl. Add the rum and rum flavouring and mix well
  2. Melt the 100 g of dark chocolate in a bowl over a pan with hot water (see tip below)
  3. Remove the pan from the heat and add the dextrose and cocoa powder. Stir well
  4. Add the melted chocolate to the cake crumbs and mix well
  5. Have a taste 😉
  6. Make small balls with from the mixture and roll them in the grated chocolate
  7. Store in an air-tight container...if they last that long!!

 

 

TIP: Not every chocolate melts well 

By white chocolate, you have to be careful that it doesn´t get too hot.

Some whole milk/dark chocolate don´t melt very well either. If this is the case, add a little cocoa butter to the chocolate.

This should help, but I`ve had chocolate that I´ve had to throw away because it just didn´t work :(

Info: Don´t forget your tolerance level!!

The rum truffle contain a little fructose and alcohol. Not enough to really mention, but still be careful!

Coconut can contain a little sorbitol. Again, not really worth a mention, but still think about it before you eat too many!!
