Banana-Chocolate Muffins

  • 150 g corn sugar
  • 150 g butter (lactose free)
  • 3 eggs
  • 150 g spelt flour
  • 1/2 packet baking powder (7 g)
  • 1 banana
  • 50 g low fructose chocolate


  1. Preheat the oven to 180 degrees. Place paper cases in a muffin form
  2. Beat the butter and sugar with a mixer until fluffy
  3. Add the eggs, one at a time and mix well
  4. Mix the baking powder with the flour and add to the mixture. Mix well
  5. Mash the banana and add to the mixture
  6. Chop the chocolate into small pieces or grate it, and add to the mixture. Mix well
  7. Divide the mixture between the paper cases
  8. Place the muffin tray in the oven and bake for approx 12 minutes
  9. Take out of the oven when done and leave to cool.
