Potato Muffins with ham and cheese

  • 200 g Potatoes
  • ┬á200 g Spelt flour
  • 2 tsp baking powder
  • 100 g melted butter
  • Approx. 6 g chives
  • 80 g boiled ham, diced
  • ┬á2 eggs
  • 80 g grated cheese
  • 100 ml milk
  • Salt, pepper, nutmeg



  1. Peel the potatoes and boil in water for 15 minutes
  2. Drain the potatoes and leave to cool
  3. Roughly grate the potatoes
  4. Pre-heat the oven to 180 degrees
  5. Fill a muffin tray either with paper or silicon cases
  6. Mix the flour with the baking powder and add the melted butter
  7. Finely chop the chives
  8.  Add the ham, cheese, potatoes and eggs to the flour mix
  9. Season with salt, pepper and nutmeg
  10.  Add the milk to the mixture and mix well to make a sticky dough. A little more milk may be necessary
  11. Carefully divide the dough in the cases
  12. Bake for 25-30 minutes
  13. Remove from the oven and leave to slightly cool
  14. Enjoy warm! ­čśë
