Potato Muffins with ham and cheese

Ingredients:

200 g Potatoes

200 g Spelt flour
-
2 tsp baking powder
-
100 g melted butter
-
Approx. 6 g chives

80 g boiled ham, diced
-
2 eggs
-
80 g grated cheese
-
100 ml milk
-
Salt, pepper, nutmeg
Directions:

Peel the potatoes and boil in water for 15 minutes

Drain the potatoes and leave to cool

Roughly grate the potatoes

Pre-heat the oven to 180 degrees
-
Fill a muffin tray either with paper or silicon cases

Mix the flour with the baking powder and add the melted butter

Finely chop the chives
-
Add the ham, cheese, potatoes and eggs to the flour mix
-
Season with salt, pepper and nutmeg
-
Add the milk to the mixture and mix well to make a sticky dough. A little more milk may be
necessary

Carefully divide the dough in the cases
-
Bake for 25-30 minutes

Remove from the oven and leave to slightly cool
-
Enjoy warm!
