Spelt Cantuccini

  • 250 g spelt flour
  • 100 g corn sugar
  • 1 tsp cream of tartar
  • 1 vanilla pod
  • A few drops of almond essence
  • pinch of salt
  • 25 g butter/lactose free butter
  • 2 eggs
  • 100 g chopped almonds




  1. Preheat the oven to 200*C. Line a baking tray with baking paper
  2. Slit the vanilla pod length ways and scrape out the vanilla seeds
  3. Using a mixer with kneading hooks, mix together the flour, dextrose, cream of tartar, vanilla, salt, butter and eggs. Mix well to make a smooth dough
  4. Add the almonds and mix under the dough
  5. Make 6 sausage shape rolls from the dough. Wrap them in clingfilm and put in the fridge for approx 30 minutes
  6. Remove the clingfilm and place the sausage shape rolls on to the baking tray and place in the oven for 10 minutes
  7. Take out of the oven and leave to cool for about 10 minutes
  8. Cut diagonal slices out of the rolls. Place the slices back on the baking tray, cut side down. Bake for another 10 minutes. If needed, turn them over and bake for another 10 minutes
  9. Leave to cool, enjoy :)
