Gingerbread cake



  • 100 g butter (Lactose free butter)
  • 100 g corn sugar
  • 100 g spelt flour
  • 2 eggs
  • 1 tsp baking powder
  • 2 tsp mixed spices

Gingerbread man tin/form or small paper cases



  1. Preheat the oven to 180*C. 
  2. Beat the butter and sugar until creamy
  3. Add the eggs, one at a time and carry on beating
  4. Mix the baking powder and mixed spices with the flour and add to the mixture. Beat well
  5. Grease the tin or place paper cases on a try
  6. Pour the mixture in the tin and bake for approx. 20 minutes in the oven
  7. Take out of the oven and leave to cool.
  8. Enjoy!!
