Shortbread

 

For approx 40 biscuits

Ingredients:

  • 360 g spelt flour
  • 160 g corn sugar
  • 15 g vanilla sugar
  • 50 g rice flour
  • 230 g butter (lactose free)

Directions:

  1. Mix all the ingredients together to a dough
  2. Wrap the dough in clingfilm and put in the fridge for approx 30 minutes
  3. Roll the dough out between 2 pieces of clingfilm until the dough is approx 7 mm thick 
  4. Cool the dough for another 30 minutes
  5. Pre-heat the oven to 180 degrees
  6. Now cut the dough into the shape wished. Make holes on the dough with a toothpick
  7. Place the biscuits on a baking tray covered with grease proof paper and bake for 12 - 15 minutes
  8. Leave to cool on the tray...enjoy!! :)
