Ginger Biscuits

 

For approx 20 biscuits:

 

150 g butter (lactose free if necessary)

50 g powered dextrose

70 g corn sugar

Tbsp ground ginger

150 g rice syrup

½ tsp cinnamon

½ tsp bicarbonate soda

1 Tbsp boiling water

 350 g spelt flour

 

  1. Pre-heat the oven to 180 degrees
  2. Put the butter, dextrose, corn sugar, rice syrup, cinnamon and ginger in a pan and melt slowly on low heat
  3. Remove the pan from the heat, before the mixture boils and let it cool down to room temperature
  4. Dissolve the bicarbonate soda in the boiling water and add to the butte mixture. It may foam ;)
  5. Add the flour and mix thoroughly
  6. Line a baking tray with greaseproof paper
  7. With the help of two spoons, divide the dough mixture onto the baking tray. Remember they will spread a little the oven, so leave room between them
  8. Bake in the oven for approx. 15 minutes until golden brown
  9. Take out of the oven and leave to cool before eating...enjoy!! :)
